L’Argence welcomes you to the northern tip of the Aveyron department, on the lush Viadène plateau, opposite the Cantal mountains, nestled in the foothills of Aubrac.
Candice and Johnathan, a young, dynamic couple
have emmeshed their 35 years of hospitality and culinary experience to showcase the region’s finest. Notably they focus on the diverse flora and fauna to create an experience reflecting their passion and respect of the lush local decor.
Leading the service and hotel management is Candice. Armed with 15 years of hospitality management in Paris, London & New York, Candice has returned to her native & beloved Aubrac following her childhood dream of creating a space that showcases her local roots.
Head chef, Johnathon, has trained under some of the world’s greatest chefs: Anne-Sophie Pic, Michel Guérard, Olivier Roellinger and worked ten years alongside the Bras family as second chef. His dedication to local products and respect of terroir translates to beautiful, subtle dishes that mirror his love for the region.
